Petite Peanut Butter Pies

On our third day of Pie Week, we bite into…Low fat peanut butter pies!

It is a undeniable truth that the smaller something is, the cuter it is.  Muffins are cuter than bread loves, puppies cuter than dogs, little girls in tutus are more adorable compared to their life-sized counterparts.

Therefore, I give you…

Originally, my love for peanut butter pie was founded in Shreveport at my father in law’s restaurant, the Southfield Grill.

After one bite, I was hooked.  The second our car passes the Texas line into Louisiana, I start drooling like one of Pavlov’s dogs.

But that’s another story for another time.

So when I found this peanut butter pie recipe from Taste of Home Healthy Cooking, I was thrilled.

When I saw it was low fat, I was estatic.

When I read it one piece from a regular pie had 305 calories, I leaped into my car and barreled to the grocery store.

And then when I got to the store, I found six delightful mini-graham cracker crusts calling to me from the shelf.

I thought to myself, “Blond Duck, you know if you make an entire big peanut butter pie you will eat it.  The whole thing.  In one night.  And it doesn’t matter how low-fat it is, your hips are still not going to survive that.”

“But….they could survive six mini pies.  After all, each pie is less than a slice.  And you know what that means….”

Excuse me.  I think I died and went to heaven.

Peanut butter pies from Taste of Home Healthy Cooking  (Makes two pies)

**Notes:  These pies are meant to be topped with chocolate syrup and peanuts.  They have to be frozen for 8 hours or overnight before you eat them, and these pictures were taken before freezing.  Besides, I’ll probably inhale them the second the freezer door cracks open.

Also, I cut the recipe in half.  It’s meant to make two pies.  I’m going to have enough trouble with six mini ones.  I don’t need two big ones to tempt me.

1 pkg. (8 oz) fat free cream cheese

3/4 cup reduced fat PB

1 can (14 oz.) fat-free condensed milk

1 tsp. vanilla extract

1 carton (12 oz.) frozen fat-free whipped topping, thawed

2 reduced fat graham cracker crusts (8 in.)

1/4 cup chocolate syrup

1/4 cup finely chopped unsalted peanuts

1) In large bowl, beat cream cheese and PB until smooth. Beat in milk and vanilla until blended.  Fold in whipped topping. Pour into crusts.  Cover and freeze for 8 hours or overnight.

2) Remove from freezer 10 minutes before serving.  Drizzle with syrup and sprinkle with peanuts.  Store leftovers in the freezer.

    PB pie is for sure on my to try recipe list! Chess pie is fabulous, and I had it for the first time this past November. It is an old Southern recipe… corn meal, butter, sugar, brown sugar, vanilla, and (as strange as this sounds) vinegar. It tastes somewhat like a creme brulee pie, but with more of a gel consistency rather than creamy. It is delicious! But what pie isn’t?

    Little tartlet pies like that are so adorable and yummy. Adorummy? Yumable? Anyhoo. I think the Beverly Hills Chihuahua movie is cute. My kids like it way more than I do. But it wasn’t completely awful to sit through it once. It’s better than Snow Buddies. I mean, movies with talking animals are kind of their own genre. The dogs are cute. The lizard (CGI) is great. If you really like little dogs you might enjoy it.
