When a Giant comes to dine

Once upon a time, a giant came to the Pond.

With his enormous stomach rumbling so loudly the walls creaked and the floor trembled, he stomped into the Pond.

“Pardon me,” he bellowed, though in his mind it was the lightest whisper.  “I am a traveler from worlds beyond here.  May I stay the night and beg a hot meal off you, kind patrons?”

“No,” snarled Queen Bitty without a second thought.

“Are you doing to eat me?” wuffled Bear, looking quite concerned as he looked up at the tall giant.

“Do you have any cookies?” the Cookie Stealing Bunny inquired, pulling his head from the cookie jar.

“I’m afraid I have no cookies, and I have no appetite for neurotic Chihuahuas,” the Giant said.  He sniffed the air and asked hopefully, “Is that pot roast I smell?”

“Sure is!” the friendly chicken Mrs. Frizzle bellowed.  “Want some?”

“Oh yes, please,” the Giant said, licking his lips.  But when Mrs. Frizzle handed him a plate, he looked down in dismay.

For it was a mere bite for a man his size.  And as his stomach reminded him, he was hungry for more than just a quick bite.

“Madame, I hate to push my luck,” he pleaded, “But is there a tad more pot roast?  At my height, I’m afraid I require a lot of energy to travel the miles I do on my adventures.”

Clucking to herself, the chicken bustled around the kitchen.  Crowing in delight, she located a forgotten dish and ladled the remaining pot roast on his plate.  The giant licked his lips in anticipation.

“And don’t forget these!” Mrs. Frizzle advised, passing over a basket that felt as light as air.  Pulling off the towel that covered the top, the Giant beamed with delight.  “Biscuits!” he cried.

“Homemade biscuits,” Mrs. Frizzle replied smugly.

The giant couldn’t have been happier.  Wolfing down the pot roast and biscuits, he sprinkled a few gold coins on the counter for his kind guests.  Queen Bitty immediately rushed over and plopped down on them.

“Mine,” she announced.  Mrs. Frizzle rolled her eyes and Bear wuffled.  The cookie stealing bunny could only shake his head sadly.

“That could buy a lot of cookies,” he muttered under his breath.

And in case a giant ever comes to your Pond hungry….

The Blond Duck’s Pot Roast

2-3 lb. roast

Salt

Pepper

Beef broth (or 2 bullion cubes with 2 cups of water)

Lowry’s Salt

Garlic Powder

2 tblspn veg.oil

Onion Powder

Lowry’s marinade

1) Marinade roast in marinade for 20-30 minutes (will probably take two packets.)

2) Rinse off and tenderize with meat tenderizer, if wish.

3) Brown in pan on stove, then place in Dutch oven with veg.oil, drippings from browning and beef broth.  Pour broth liberally over roast.

4) Season with seasonings to taste.

5) Add whatever vegetables you like.

6) Cook for an hour to hour and a half for each pound in the roast at 325- 350 degrees, depending on your oven.  Be sure to ladle drippings over roast halfway through.  Before serving meat, let rest for 10 to 15 minutes.

Biscuits (from Alton Brown)

Ingredients

  • 2 cups flour
  • 4 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 3/4 teaspoon salt
  • 2 tablespoons butter
  • 2 tablespoons shortening
  • 1 cup buttermilk, chilled

Directions

Preheat oven to 450 degrees.

In a large mixing bowl, combine flour, baking powder, baking soda and salt. Using your fingertips, rub butter and shortening into dry ingredients until mixture looks like crumbs. (The faster the better, you don’t want the fats to melt.) Make a well in the center and pour in the chilled buttermilk. Stir just until the dough comes together. The dough will be very sticky.

Turn dough onto floured surface, dust top with flour and gently fold dough over on itself 5 or 6 times. Press into a 1-inch thick round. Cut out biscuits with a 2-inch cutter, being sure to push straight down through the dough. Place biscuits on baking sheet so that they just touch. Reform scrap dough, working it as little as possible and continue cutting. (Biscuits from the second pass will not be quite as light as those from the first, but hey, that’s life.)

Bake until biscuits are tall and light gold on top, 15 to 20 minutes.

    I’ve never made baking powder biscuits with buttermilk, and I don’t roll mine out either. When you have to make 6 to 8 dozen, time is of the essence (sigh). Your pot roast looks great, and your biscuits are so pretty!
