A Muffin to Make You Blue

As an avid country fan since I was old enough to warble, I know just how many ways one can be blue.

There’s blue eyes crying in the rain, being blue and oh so lonesome for you, the lonesome wail of searching for one’s blue, blue angel, and George Strait’s heart breaker with baby blue eyes. And that’s just a few.  There’s dozens more songs about blue eyes haunting singers, brown eyes turning blue from crying and men so blue a night of honky tonkin’ can’t cure them.

But muffins can.

Now, I’m positive if George, Willie Nelson, LeAnn Rhymes and Aaron Tippen had sampled a few of these muffins, they’d be singing about pink clouds and sunshine and all things delightful.  But, that probably wouldn’t make for a very good country song, I’m sure.

Here in the Pond though, these muffins don’t appear when one is blue.

Did somebody mention muffins? We love muffins!

Quite the contrary.

If I had to construct a country song about the importance of blueberry muffins in the Pond, it would go like this:

I knew it was going to be a good day (long violin),

When I smelled that blueberry muffins.

She had been cooking all morning,

And I just couldn’t wait for them.

With just one bite (guitar wail here)

It took me back.

It was like we were back in college again,

In that old kitchen.

Each bite reminding me of long drives on the dark Waco road (more guitar wails),

and going to Wal-Mart at midnight,

Long summers with cool ice cream,

And lounging in the pool till daylight.

Wuffle.  Don’t give up your day job.  Wuffle.

So when your life feels like a country song or you just want some happy sweetness to your day, have a muffin.

I promise, you don’t even need to sing about them.

Though it doesn’t hurt.

Blueberry Muffins (From Any Bitch Can Cook Cookbook)

1/2 cup margarine

1 cup sugar

2 eggs

1 3/4 cups all purpose flour

1 tsp. baking powder

1/4 tsp. salt

1/4 tsp. ground nutmeg

1/8 tsp. ground cloves

3/4 cup buttermilk

3/4 cup blueberries

Grease and flour muffin tins or use paper baking cups. Cream margarine and sugar until light.  Add eggs one at a time, beating well after each addition.  Sift flour, baking powder, salt, nutmeg and cloves.  Add to creamed mixture alternately with buttermilk.  Fold in blueberries.  Fill muffin tins 2/3 full.  Bake 20 to 25 minutes at 375 degrees.  This recipe can be made in advance and frozen.  Yield: 24 muffins.

Extra: If you wish, you can also melt 3 tablespoons of butter and combine it with 1/3 cup sugar and 1 tablespoon of orange peel and dip the tops of the muffins in the mix.  I didn’t do this, however.

    Suzie keeps her dish towels sparkling white (I mean WHITE… really!) by changed them daily AND cleaning with bleach and/or comet only.
    Her hands are cracked but her kitchen is CLEAN and her dish cloths are WHITE.
    I tried to soak in bleach every couple of uses and I just couldn’t keep it up. That is why opted for colored ones… lazy… um I mean busy. I have two toddlers and a business. I do still change them once a day.
    The dish cloths.
    Not the toddlers.
    I change the toddlers umpteen times a day.
    I won’t go into details but poo is involved.
