Fried Bits O’ Heaven

Here in Texas, there are only two real ways to eat chicken: fried or barbecued.

Now, sure you can grill, broil or bake chicken. But as any proper Texan or Southerner knows, if you can’t fry up a good batch of chicken, you best head up north.

Now, the best thing about fried chicken is it’s so diverse. You can eat it with biscuits and gravy. You can eat it with rice and gravy. You can have it with mashed potatoes and gravy. You can slather fried chicken in ketchup, bbq sauce or even hot sauce if you please.

But the best way, in my opinion, is to eat fried chicken with some homemade macaroni and cheese. And some sauteed (fried) green beans.

Sunday, Monday, Tuesday, Wednesday–it doesn’t matter what day of the week or what time it is. I’m always up for fried chicken and macaroni and cheese. You just can’t beat it.

So why don’t you fry up some chicken tonight?
It’s the Texas way.

The Blond Duck’s fried chicken
4-5 chicken breasts, tenderized and cut into strips or small “nugget” pieces
Flour
2 eggs
McCormick’s chicken seasoning
Vegetable oil
1) Cut and tenderize chickens. I use a contraption like this.
2) Fill a bowl with between a cup to two cups of flour. Crack the eggs and mix together in a small bowl.
3) Dip the chicken pieces in the egg, then in the flour. Place in a separate bowl.
4) When all the pieces are done, fill a skillet with vegetable oil so the entire bottom is covered. Let it heat up, then put in chicken. Once one side is done, flip it over and sprinkle seasoning over chickens. Use a heavy hand. Flip chickens over again and add more seasoning. You may need to do this one or two more times.
5) After chicken is done, mix up some gravy! I do it all by feel with flour and milk and butter, but here’s a recipe just in case.
White Gravy (for 2-3)
2 tblspns butter
4-5 tblspns Flour
2 cups Milk
Pan dregs from fried meat (whether beef or chicken)
1) Melt butter in skillet.
2) Add about a tablespoon of flour at a time, stirring until thickened. Basically, act like you’re making a roux.
3) Add about half of the milk and some more flour, until mixture is smooth.
4) Pouring off some of the excess oil, add the fried bits and grease from the fried chicken pan. Stir quickly.
5) Alternate between milk and flour, stirring constantly, until gravy is smooth. Add salt and pepper to taste.
6) Serve over fried chicken!

You’ll get no arguments from me! Fried and bbq’ed are my two fav ways of eating chicken too. =) We have fried chicken almost once a week now that we process our own chickens. And, you’ve made me hungry!

Fried chicken and mac and cheese are both beautiful things. My fried chicken was something that it took me a little work to get right, but it’s getting better, prety good in fact. I guess I could do okay in Texas. I may have to. I can’t take the NY weather anymore. Your suggestion was right on the money. I was in TX in February and was drinking in the beautiful weather (but when I got back to NY the weather was almost as nice -go figure).

Fried chicken is the best! My Dad makes the best fried chicken mostly because he has the patience to cook it slow (using bone in) and not turn it until it’s ready and beautifully brown. Seeing your post has given me the push to make some fried chicken…..mmmm.

I love friend chicken too – my grandma used to make the most delicious friend chicken – oh lord my mouth is watering just thinking about it right now . . . she would fry it in this big black cast iron skillet and then put it in a huge thick pot (sort of like what the inside of a crockpot is made of) and bake it in the oven for a bit. DELICIOUS!!
The crazy thing is – my hubbie HATES friend chicken!! He detests it! All those years of working at Browns chicken did him in!
