Apple Pecan Cream Pies
The other week, my dear buddy Katherine from Smoky Mountain Cafe e-mailed me about a pie.
And not just any pie.

A fabulous, perfect for summer pie. An Apple Pecan Cream Pie.
I was so delighted, I responded in an ode. (Doesn’t everyone?) I crooned:
Ode to Katherine, and how I love thee.
For you have passed on a pie,
That as wicked as it is tasty.
My hips will grow,
My waist will spread,
But at least I’ll be happy
When I’m 400 lbs and stuck in a bed.
Apples and pecan,
cream and pudding,
I do believe,
You know what I’m needing.
Ode to Katherine,
And how I love thee.
For she just gave me,
A new pie to eat.
You can ask her. I really did do that.

Of course, I couldn’t just make one pie. I had to make five little pies.

The only thing tastier than a big pie is mini pies.

And they’re much cuter.

The best thing, however, about these tasty mini apple pecan cream pies, is that they’re perfect for summer. They’re easy to mix up, light and nice and cool.

And the best part is there’s no baking. You don’t even get near your oven or microwave.

First, you mix up the apple and pecan mixture. (Please ignore the sugar smears on the counter.) Then, you mix up the cream mixture and dump it on top of the apples.

Then you freeze it for an few hours and move it to the fridge. I knew you were wondering how exactly you would freeze a mini-pie with inches of cream laden on it, so here’s my little foil “hat” I made mine. Just pretend you’re making a foil hat to keep aliens from transmitting signals into your brain. It’s fun. I swear.

And then you can mix all the leftovers together and eat it straight out of the bowl.
Not that I would do that.
So thank you, dear Katherine, for sending me this pie.

It’s five times as delightful as I ever imagined it would be.

Apple Pecan Cream Pies
Apple Pecan Cream Pie
1 can (21 oz.) apple pie filling (sliced or chopped)
2 tbsp firmly packed brown sugar
1/2 tsp ground cinnamon
1/2 cup chopped pecans
1 prepared 9-inch graham cracker pie crust
1/2 cup cold milk
1/2 cup half-and-half or light cream
1 pkg. 4-serving size instant vanilla pudding
1-1/2 cups of whipped topping 1-8oz container of whipped topping equals 3-1/2 cups
In a large bowl, combine the apple pie filling, brown sugar, and cinnamon; stir in the pecans. Spread half the mixture in the pie crust. Refrigerate the other half. Place the milk and half-and half in a medium-sized bowl; add the pudding mix and beat with a wire whisk until well blended, about one to two minutes. Gently fold in the whipped topping until well blended. Spoon the pudding mixture over the apple mixture in the crust. Freeze for at least two hours before serving. Remove from freezer one hour before serving, and garnish with remaining apple mixture and whipped cream if desired.

Oh my, you know my son like to say that he’s rather die young and happy, then live long and measurable. WELL, I am not, so I always puss him to exercise! Luckily he is in a very good shape and like to exercise. You know the other thing is, Pecan Pie is his favorite American pie. Pecan pie is a must pie to make on Thanksgiving, AND he can be very upset if I forget to make this one. He can eat half pie just by himself.

Oh Duckie… THESE LOOK FREAKIN AWESOME!!!!!!! I love apple cream pie. But I’ve NEVER EVER had it with the nuts. And I’ve been missing out! foil hats for aliens, you say? Why didn’t I think of it. Now I am definitely gonna have to give these cutesies a try!!!

I am so glad you liked the pie(s). They couldn’t be more simple or tasty. I was going to post your ode (you know how I love all of your odes), but I thought it would be too pompous of me to post it.
