Peanut Butter PB Chip Cookies

What’s better than peanut butter cookies?

Peanut butter cookies with peanut butter chips, of course!

That’s right.  A peanut butter cookie isn’t truly a peanut butter cookie without that extra kicked of peanut butter chips.

At least, if you’re the Blond Duck it’s better.  But not everyone is as PB obsessed as I am.

Ok.  Fine.  Maybe no one likes peanut butter as much as me.

At least I know there’s someone who likes cookies more than me.

For now.

They’re even tasty when they all mush into a giant cookie tectonic plate.  And you can freeze them so you don’t eat them all in one batch.

But you know what makes these peanut butter peanut butter chip cookies even better?

A glass of milk.

Have one, won’t you?

Peanut butter cookies from Better Homes and Gardens New Cook Book

1/2 cup butter

1/2 cup PB

1/2 cup sugar

1/2 brown sugar or honey

1/2 tsp baking soda

1/2 tsp baking powder

1 egg

1/2 tsp vanilla

1 1/4 cups all purpose flour

granulated sugar

1/2 bag peanut butter chips

1) Beat butter and pb in mixing bowl on medium to high speed for 30 seconds.  Add sugar, brown sugar/ honey, baking soda and baking powder.  Beat until combined, scraping sides of bowl occasionally.  Beat in as much flour as can with mixer.  Stir in remaining.  Add chips.  If necessary, cover and chill until easy to handle.

2) Shape dough into 1 inch balls.  Roll in sugar to coat.  Place balls on cookie sheet and flatten with fork to make criss-cross lines.  Bake in a 375 degree oven for 7 to 9 minutes or until bottoms lightly browned.  Makes 36 cookies.
