Invisible Inspiration 2
The other day, my buddy Reeni from Cinnamon Spice & Everything Nice posted a tasty recipe of chicken souvlaki. Being a lover of all things gyros and Greek salads, I was immediately enchanted.
Inspired, I pranced off to the store to make my own version.
And then I remembered something.

I live in Texas. South Texas, to be precise. Land of cacti, Mexican food and two months of 105 degree days. Our grocery stores are stuffed with lard, masa, tortillas, peppers, corn husks… Not Greek yogurt and pitas.
So I had to make some changes.

I’d like to introduce to you the product of my Invisible Friend Inspiration 2, or South-Texas-style-Greek Gyros.
Fine, let’s call it what it is. Redneck Gyros.

I told ya’ll I was better at frying stuff than actually cooking. If it ain’t fried, fattening or a pie of some sort, then I’m no good at it. And now ya’ll are seeing the ugly truth for yourself.

The really ugly truth.

And here’s my pathetic attempt at a Greek salad. A bunch of salad mix with feta cheese and olives dumped on it.
I never knew what to do with green things.
While my Redneck Gyro made me happy, I doubt most of my sophisticated Invisible Friends would appreciate it. To truly appreciate culinary efforts like this, you have to be able to enjoy eating packaged deli meat sandwiches with Miracle Whip when you go to your grandmother’s Sunday afternoon with chips from the Piggly Wiggly that carries pickled pig feet.

But I was happy and full. That’s all that matters, right?
Right. I’m going to the Piggly Wiggly now.

Redneck Chicken Gyros
You’ll need:
2-3 chicken breasts
Greek seasoning
Muenster cheese (or you could use mozzarella, shredded.)
Red peppers, sliced
Black olives
Low-fat mayo (or miracle whip)
A sprinkling of feta cheese
Greek whole-wheat pitas
1) Grill chicken after brushing on thin coat of olive oil and sprinkling on Greek seasoning.
2) When chicken is done, cut into slices.
3) Place glob of low-fat mayo on pita and spread. Lay down slice of muenster cheese, then chicken, then sliced red peppers and black olives. Sprinkle a bit of feta cheese over it.
4) Eat with a lot of napkins, as everything will ooze out and fall apart. That’s what makes it so delicious. Messy food is tasty food, ya’ll.
5) Don’t forget a salad with your meal. It’s healthy.
I promise, next week I’ll have something much tastier and sophisticated. I swear.

Hey our Piggly Wiggly sometimes carries chicken feet. When I moved to this area of the state (MS) in 94, my mouth fell open.

Looks yummy…great effort! That’s more of a Greek salad than I ever make for myself. My hubby and I totally cheat and buy the pre-made gyro kits…a little spendy but OH SO GOOD!

I have heard amazing things about gyros, yet have never tried one myself. These look yummy – and I’m not just saying that because I haven’t eaten yet today, and am absolutely starving!
By the way…no Irish necklaces to speak of – just Tokyo, Paris, California, London, Venice, and Amsterdam. Perhaps they’ll make an Irish one in the future. I know when they were first released, they only had Paris and London, or so I’ve heard.

If there is no Greek yogurt around, get a container of ordinary yogurt and drain it in some cheesecloth for a day or two. You’ll get the same consistency of the Greek stuff.
Now I find myself singing. “I’m a redneck gyro, I ain’t no high-class Greek…”
