Christmas Enchiladas

Down here in South Texas, folks don’t eat baked hams or roasted turkeys for their holiday feast. They eat two things: tamales, and steak and enchiladas.
Normally, the enchiladas are cheese or beef with chile con carne drizzled over them. But this summer and fall, I had a hankering for enchiladas of a different flavor.

A red and green flavor.

A cheesy flavor.

A kind of spicy, really tasty, non-greasy flavor.

And when you get one of these little enchiladas on your plate, no matter if it is August or September or July or May, you feel as hopeful and joyful as one does on Christmas morning.

But it helps if you have red and green peppers with green chilies and red enchilada sauce. And if you get red enchiladas, you’ll practically hear Christmas carols coming from the oven.

These red enchiladas prefer to sing, “Angels We Have Heard on High.”
Just in case you were curious.
I know you are.

Christmas Enchiladas
4 cooked and chopped/ shredded boneless, skinless chicken breasts
12 corn tortillas
Sweet red pepper, chopped
Sweet green pepper, chopped
Green chilies (from can is fine) or jalepenos, if you want something not as hot
Queso Aserado (white Mexican cheese. It comes in a little round wheel, so you’ll have to shred yourself or cut into chunks, which is what I do since I can not, and will never be able to, properly operate a shredder.)
Red enchilada sauce (canned is fine, homemade is fabulous).
***If you’ve got the time, you can sautee the chicken with onions and more green peppers, cool and chop for an extra kick.
Directions
1) Place 5-6 corn tortillas flat on a pan.
2) Sprinkle on chicken, peppers and chiles, cheese.
3) Drizzle on desired about of enchilada sauce.
4) Add more cheese. Cheese is very important in Christmas Enchiladas.
5) Place other tortilla on top. Add more red enchilada dressing and sprinkle with cheese.
6) Cheese is very important in Christmas enchiladas.
7) Bake at 350 degrees for 20 minutes. Serve with rice and beans.

It’ll feel like Christmas.

Sorry, Duck, but I just don’t think enchiladas are going to invoke holiday spirit in my family!

These look very festive, Duckie. I wonder if I could just make some veggie ones, as I don’t eat meat? I love peppers and cheese though, and anything spicy, so I could roast the peppers and spice them up!

These look really good- and healthy, which is always a winning combo.
Also- definatley a post Halloween ocean baby playdate. The Halloween babies like to be here for Halloween (they’re guests of honor at our Halloween party, and they like to help pass out candy… it’s like Christmas for them, only they don’t feel so out of place, being dead and all.)

We make Mexican food for Christmas up here in Oklahoma too! Well, at least my family does. =) These just might be what I take to Christmas Eve this year!! I usually make my world famous (ok, not really) white chicken enchiladas, but a change sounds nice…or maybe I’ll make both. They sound delicious. Can’t wait to try them!

I will be going to the Mexican place down the road for lunch tomorrow. Giving me a recipe is like giving me the blue prints for the space shuttle – I’m not likely to use either one.
But there is a full tank of gas in my car and enchiladas sound GOOD.

Christmas Enchiladas sound mighty tasty and they look good. I’ll be doing my turkey all the same, but I think some enchiladas the day after made with the lefotver turkey sound fantastic! I’ll call them Boxing Day Enchiladas!
