Beef Tips and Rice

After a long hard day in the world of business,
On a grey day of cold and rain,
Ben trudged home from the office,
feeling worn and drained.
He put the key in his lock and pushed inside,
After petting the leaping Babies and greeting Queen Bitty,
He stopped and sniffed.
“Is that what I think it is?” he asked, his eyes wide with delight.

His nose had not deceived him,
Much to his relief.
And his stomach began to growl,
At the sight of rice topped with tender hunks of beef.
Hopping out of his shoes and racing across the floor,
his mouth watered.
“You have no idea,” he murmured as the Blond Duck dished up his bowl,
“How happy I am to see this dinner. And you of course,” he added hastily, snatching his bowl before she could hear.

Scurrying to the table,
Ben could hardly wait for a fork and a glass.
He dug in enthusiastically,
Barely stopping to breathe or chew.

The thing about beef tips and rice you see,
is it’s so simple,
But ever so tasty.
The dish is simply rice and beef,
stewed for hours in a rich gravy,
served with vegetables (collard greens if you’re Southern),
and a good dinner roll or two.
So whether it’s cold and gray,
Or warm and sunny,
Bad day or good,
Celebration or comfort,
Beef tips and rice can soothe away any kind of pain or heartache,
And cure a terrible gray day,
Or prevent one from occurring.
Trust me on this one.

Beef Tips and Rice
3 tblspn vegetable oil
1 onion, chopped
2 lbs cubed beef tips (Sirloin beef tip roast, cubed)
2 cups water
1/4 cup Soy sauce
1/4 cup Worcestershire sauce
1 tsp. garlic powder
1 tsp. salt
1 tsp. black pepper
1 packet brown Pioneer gravy mix
1 cup water
White Rice (However many cups you would like)
1) In a large skillet, heat oil over high heat. Saute onion until almost translucent. Brown meat in vegetable oil. Add meat, onion and juices (may not want to add all of the oil if looks too greasy) in a dutch oven with the other spices and water, but not the gravy mix. Cook for two hours on low. At the last thirty minutes, add the gravy packet and 1/2 to 1 cup of water, depending on how much liquid left. This could also be cooked in a crock pot. Just remember–low and slow! Serve over rice or egg noodles, if you like.

We make these too, but we sometimes use stir-fry beef and we add A-1 steak sauce to the meat and rice!! Delicious!

Awww he is so adorable! This sounds really delicious. My step mom used to make a similar meal but would serve it over egg noodles. I think I made this I would try and use brown rice since I’m attempting to be healthier. Which is hard because I like all things unhealthy….doesn’t it always work that way?

You can even sneak healthier rice in on Ben. Brown rice or long grain and wild rice mix would be superb, too! Poor guy looks exhausted there in his Santa hat.

Oooh! I love a good crockpot recipe, and this one looks brilliant! And healthy, too- sirloin is usually pretty lean. If I paired this with some brown rice and greens (or cooked spinach) it’d be a yummy comfort dish that I wouldn’t have to feel guilty about…
