Oatmeal White Chip Bars

Hear ye, Hear ye! Saturday we’re having a special “All about the Blond Duck Feature! Ask me anything you want, anything at all–am I a natural blond, did I really get married at a bbq restaurant, what’s my favorite type of pie, do I really eat tons of bbq and Mexican, do I prefer ketchup or mustard–whatever you like! Ask me by 5 p.m. Friday and you’ll learn all Saturday morning!”
And now, for our scheduled post…

Queen Bitty hates these delectable treats.
She abhors them.
She despises them.
She loathes them.

And it’s not because they’re delicious.

It’s not because they’re a mix of white chocolate and caramel goodness in a sugary, buttery, crumbly oatmeal crust.

It’s not because you will throw all your willpower and reserve out the window and only sheer stomach size will keep you from eating the whole pan.

It’s because she can’t have any.

Because as much as Queen Bitty hates to admit it, she is a dog.

And puppies can’t have buttery sugary oatmeal goodness layered with white chocolate, caramel and nuts.

These aren’t PB cookies for puppies, after all.

So if you like brown sugar crumbly buttery oatmeal….

And white chocolate and caramel ( I used dulce de leche caramel to make it even more irresistible…)

You’ll love these bars.

Even if Queen Bitty doesn’t.

The Cookie Stealing Bunny, however, will love you forever.
And steal every last crumb.
Ingredients
* CRUST
* 2 cups all-purpose flour
* 1 1/2 cups packed brown sugar
* 1 1/4 cups (2 1/2 sticks) butter or margarine, softened
* 1 teaspoon baking soda
* 1/2 teaspoon salt
* 2 cups quick-cooking oats
* FILLING
* 2 cups (12-oz. pkg.) white Morsels
* 1/2 cup chopped nuts
* 1 cup caramel or butterscotch caramel fudge topping
* 3 tablespoons all-purpose flour
Preheat oven to 350° F. Grease a 13 x 9-inch baking pan.
FOR CRUST:
Beat flour, sugar, butter, baking soda and salt in a large mixing bowl until crumbly. Beat in oats on low speed just until combined. Press half of mixture (about 2 1/2 cups) into bottom of prepared baking pan.
Bake for 10 minutes. Cool in pan for 2 minutes.
FOR FILLING:
Sprinkle crust with morsels and nuts. Blend caramel topping with flour. Drizzle over morsels and nuts. Crumble remaining oat mixture over nuts.
Bake for 18 to 22 minutes or until golden brown. Cool completely in pan on wire rack. Cut into bars.

oooh. Mah. Gawd. You know I’m 31 weeks pregnant right now yes? So posting this was like TORTURE to me and thus I have nothing to say except that the cute pic of the puppy glaring kinda sums me up right now.
I HAVE TO MAKE THESE!! I love oatmeal. I love caramel. Sweetness overload.

Oatmeal and white chocolate is a superb combination. Im sure this was a big hit at the pond.

I noticed that Queen Bitty ditched her crown and looks a little depressed over not getting to eat those cookies. I hope she got one of her doggie treats.
FYI~ french fries are fried potatoes, and if you add ketchup you are getting a second veggie, see how that works, you just have to think like a kid.
