Cornflake Chicken

When Ben and I were in college, we were a rarity because we cooked three to four nights a week.
You don’t cook in college, friends and parents told us. You study (parents), party (friends), get internships (parents) and go on road trips (friends.)

We still cooked. We did plenty of studying, interning and road tripping (we weren’t really the party type.) But we did plenty of cooking too. And even though our skills were limited to quesadillas, grilled chicken on the George Forman and tuna casserole, a staple in the pre-Pond apartment was baked chicken with boxed macaroni and cheese. And if it wasn’t Parmesan or bisquick chicken, it was cornflake chicken.

After two years of baked chicken, Ben went on a beef craze and developed an unholy passion for McDonald’s cheeseburgers that lasted until senior year. And except for the occasional dish, our chicken was either grilled, fried, barbecued or stuffed in a taco or enchilada.

Until now.

As I admitted in my all about me post, we actually eat pretty healthy most of the time in the Pond. Where we used to eat a lot more fried dishes (I grew up in Texas, ya’ll), we’ve cut those back and do a lot more baked and grilled, broiled and slow-cooked…
I’ve officially become boring and old. I need to go fry some chicken now.

But in my quest for new, healthy dishes, I brought back an old favorite. Cornflake chicken.

Of course, me being me, I couldn’t leave well enough alone. I had to improve and spiff up the recipe. And in my newest issue of Women’s Health, I had seen a Katie Joel Lee recipe from her new cookbook about oven fried chicken using cornflake crumbs.
So I tried it, tweaking it a bit. And I’m happy to say…

Cornflake chicken is once again a Pond staple.

This recipe has been Ben-approved.
Cornflake Oven Fried Chicken (based on Katie Joel Lee’s recipe)
2-3 cups crushed cornflakes
1/2 cup Dijon Mustard (or more if needed)
4 chicken breasts, tenderized and sliced into thin strips
Parchment paper
Onion powder and garlic powder to taste
1) Heat oven to 400 degrees. Line baking pan with parchment paper and spray with cooking spray.
2) Dip chicken breasts into Dijon mustard–don’t be skimpy–then roll in cornflake crumbs. Place on pan. Repeat until done.
3) If desired, sprinkle on seasonings. I forgot to do this but will do it next time.
4) Bake at 400 degrees for 15- 20 minutes until chicken isn’t pink. It’ll be real soft and tender, so don’t let that fool you. Serve with ketchup or barbecue sauce and macaroni and cheese.
Or whatever else you like.

I do the same with pork chops and we love it too! Served with a green salad so we fell less guilty about the frying, and a slie of lemon, it’s deevine. Will be trying it with chicken now.

I don’t even own a frying pan! But the sound of cornflakes makes a change from breadcrumbs…and I love mustard! In fact anything with a bit of a kick! Spicy food I love, so I make up things as I go along.
Usually they end up edible!

The best part of cornflake chicken is finally having a use for the cornflake crumbs left in the box. Your recipe sounds great. Have you ever tries your crumb mixture on pork chops? I’ll bet it would be good.

This is the only way my husband likes it prepared. If he wants “fried” fried chicken, a restaurant in our town makes some pretty awesome birds.

Oooh, yum! I, too, used to make a lot of cornflake chicken. Wow. I had forgotten all about that! This recipe looks good, especially with the dijon mustard. I will have to try! (Especially since it is “Ben” approved!)

I love oven-fried chicken. My dad did one with cornflakes when I was little- remember those dinners as a kid that made you think “Oh, yeah, tonight’s gonna be a good night.”? Cornflake chicken was one of those dinners.
My dad would season plain yogurt (salt, pepper, mustard, &c) and marinate the chicken in yogurt the night before, then shake off the excess, roll it in cornflakes and bake it. The yogurt made it super moist- kind of like buttermilk fried chicken.

I want to cook with you- you always look like you’re having so much fun in the kitchen. Josh and I actually cooked in college too! We mostly made stir fry, pancakes and chicken parm. I make something really similar to this too! It’s one of our favorite meals. Mr.NN usually ends up topping his cornflake chicken with a little Frank’s Red Hot…:)
