Chicken Soft Tacos, Version 1

I love Mexican food.
Which is a good thing, since I live in a city 100 miles from Mexico and has a tacqueria on every corner. Tacos, enchiladas, fajitas and burritos are staples in the Pond.
As they should be everywhere. But that’s another story for another time.

The best part about tacos is there’s a million different variations. Corn or flour tortillas. Chicken or beef. Fajita chicken or shredded chicken. Ground beef or shredded, slow cooked roast or flank steak or skirt steak. Beans or no beans. Queso blanco or cheddar. Veggies or no veggies. Peppers or cabbage. Fish or pork. And that’s not even getting started on breakfast tacos. That’s a whole other post.
Another story for another day.

It’s probably no surprise to you I eat tacos two to three times a week, at least. And I never get tired of them. On the contrary, I simply crave them more and more.
I’m going to be in real trouble if I ever have to move outside of Texas. So I simply refuse to.

This is one of my chicken soft taco variations. You use grilled or shredded chicken, ranch style beans and a mix of Monterrey and cheddar cheese. Just make sure you heat up the corn tortillas in the microwave for thirty seconds, then add the chicken, beans and cheese (and red and green peppers, if you have any on hand. I didn’t.) Then you melt the cheese in the microwave, serve with sour cream and salsa, and inhale.
It’s good. It’s fast. It’s easy.
And it’s tacos. What more could you love?
Perhaps a chicken soft taco with wheat tortillas, black beans and queso blanco. Or a shredded chicken taco with peppers and queso blanco. Or a chicken fajita with refried beans. Or a beef taco…
But that’s another story for another post.

Don’t worry…there are excellent tacos everywhere. We have three fabulous places in our town alone! And I know all about them because two of my best friends love Mexican food and are very particular. I don’t care for it myself, but accompany them often on their quest for the best in Mexican food.

That looks great. I luv corn tortillas. But, am on the whole wheat thing right now so can’t have corn. Boo hoo. But, I could sub those low carb tortillas, although it won’t be quite as good…..

Mexican food is so quick & tasty, it’s tough not to love it! I made some veggie nachos this weekend for pre-Easter nibbles and they were fantastic: round tortilla chips topped with refried beans, diced bell peppers and red onions and topped with shredded colby-jack. Ovened until just melted. So good, I want to make more right now!

I lay out the “traditional” taco fixins on a Friday or Saturday, and everyone serves themselves. We always have tortillas for “make your own some sort of taco” for lunch and snacks. And there’s nothing like a good selection of cheese to make food perfect.

LOL! See how many comments a post about food with mouth watering pics gets? I love Mexican food too. Recently went to Santa Fe where they made guacamole at the table. Fresh as fresh could be. Heaven! I make a version of this w/out the chicken – replaced with beans.

I agree that you can put just about anything in a tortilla and call it a taco. I think taco really mean snack food.

I love Mexican food. Its a staple in our house. We used to go out for it often, but I kind of like the at home version better. Less grease, more good stuff
You must eat some pasta salad ASAP. Deliciousness. A lot of people make it with italian salad dressing- that is awesome too!
