Classic Apple Pie

This is the best apple pie in the world.
It’s the best apple pie I’ve ever had.

Crust from scratch, apples diced not too thin, the perfect amount of sugar and spice…

We created it, he and I.

He peeled and diced the apples and mixed everything together. I made the crust, laying the strips one across the other and slid it in the oven.
We both devoured it.

It was the best apple pie I’ve ever had.
And trust me, I know pie.

But I can’t give you the recipe.
You see, we made this pie. It’s a mix of both our favorites, the perfect combination of both pie tastes. Apples smaller than I wanted, bigger than he wanted. Lattice crust instead of crumbly like I prefer, and thicker than he likes.

And so really, it’s our pie. Our pie of love, if you want to get gushy.

But never mushy. Pies aren’t good mushy.
And so I can’t share, because I think that would take away some of it’s magic. Because like secrets, pies are much more delicious when they have a bit of magic, a bit of mystery to them.

But just know it’s a phenomenal apple pie.
And I’ll be making another one this weekend.

With his help, of course.
Stay tuned, Invisible Friends! We have a new Dallas Jean and then a new whimsical Easter treat! Stay tuned!

I sometimes worry that because of your blog I’m going to develop a severe addiction to pie.
This post did not help.

You make me so pie-obsessive! Good thing I’m doing a lot of pie baking for Easter this year.
I wish my husband would help me with apple prep when pie baking! He stays out of the kitchen until it’s time to eat!

Awww baking together sounds like so much fun! Usually I’m the baker and my husband cooks dinner, but I’d love to see what we can make as a team! He LOVES apple pie and that looks delicious!

Now, this is one thing about me that I have to admit (publicly) eventually. I don’t know how to make the real authentic American apple pie, isn’t it embarrassing? I mean, I can make a decent pastry, well actually I can make a very good pastry, BUT, a real American pie? it’s pretty challenging. Maybe I just need to practice more, or maybe I just have to find one good recipe that will make me confident enough to make it. Anyway, each time you post this pies, it makes me want to go to Marie Callender’s (I know, right?) to grab one. Don’t tell anyone! lol!

Man, you are fancy with the crust!
April 1st, 2010 at 8:44 am
I only like pie filling for some reason; the crust just doesn’t appeal to me.
As for the waffle bar…if I put one together want to come over and dig in?!

I kept waiting for you to say April Fool’s! And to reveal that it was really a store-bought pie, or a ceramic pie. But how lovely, it was a real pie! And you two made it together. How sweet!!
April 1st, 2010 at 6:39 pm
