Pimento cheese of my dreams

Every few weeks, I go see Mrs. McGill.
Mrs. McGill is magical.
Every time, I come for lunch and she greets me with a smile. I follow her to the kitchen, where she sets our plates out with the same thing every time: a hardboiled egg, tuna salad, and chips. And then, there’s always a surprise. Sometimes it’s bread and cheese. Sometimes it’s crackers with an amazing olive spread.

Last time, it was pimento cheese. And as you read Tuesday, I ate the whole bowl. And most the sandwiches.
And I wasn’t ashamed a bit.

I adore pimento cheese.
But only Mrs. McGill’s pimento cheese.

Therefore, I had to re-create it.

It wasn’t as good, of course.

Nothing is as good as Mrs. McGill’s, even if she did give me her mother’s secret recipe.

Not that it stopped me from gobbing it onto crackers…..
Taking big, cheesy bites….

Until the whole bowl was gone.
What can I say?
I’m a pimento cheese piggie.
Now Invisible friends, don’t be mad, but I can’t share this recipe. It’s not mine to share. It’s Mrs. McGill’s mother’s. I hope you understand.

A friend of mine that live back east was talking about how much she loves pimento cheese. I had never had it or heard of it. So I asked around and none of my west coast born friends had ever heard of it either.
So I’m thinking pimento cheese is a regional thing.

Hey girl. Yes, I have been in blogger slacker world lately. Sorry I have not been by to say hello. But I’m here now – doesn’t that count?
Those pimiento sandwiches are beautifully cut and photographed. I hated pimiento cheese when i was little because my mom would always buy that kind in the dairy. . you probably know the one. Now I make it homemade and I love it!! My secret ingredient is dillweed. But sssssh, don’t tell anyone!

Pimento cheese is total treat food for my sister. My mother used to occasionally buy one of the Kraft jars and she’d hog it and savor it. I cannot believe you scarfed the whole bowl. Did God make you with a black hole in place of a stomach??

Hi, Duck! Good to “see” you again; it’s been too long since I’ve been by your magical kingdom.
I also adore pimiento cheese – one of my fun moving to the South/Southwest culinary finds. “Southern Living” has a good looking recipe in last month’s issue which I’ve been meaning to test out, so thanks for the reminder.
