Shredded Chicken Refried Black Bean Quesdillas

Yes, it looks like an oversized hamburger.

I’m obviously terrible at staging and photographing Mexican food.
But I don’t care. Because even if it looks terrible and unappetizing, it’s delicious.

Just pretend that’s the quesdilla I made: pretty, lighted perfectly, arranged artistically instead of slapped on a plate while a few hurried pictures were taken while wiping the drool from my chin.

I drool. It’s true. Sorry.
Anyway, envision red and green peppers, refried black beans, shredded grilled chicken, queso blanco….
On wheat tortillas, grilled to near charred perfection on a hot skillet.

Imagine it.
Well, don’t imagine that. It’s not pretty enough.

Just pretend those are the ones I made. Pretty, tasty, delicious.

What? I’m good at eating and cooking. I never said I was good at making pretty, presentable, astically pleasing dishes.
Don’t judge me.
Shredded Chicken Refried Black Bean Quesdillas (for one)
Shredded chicken breast, previously grilled in a former life
Obscene amount of queso blanco, aserdo or Monterrey
Refried black beans (I used a can)
Red and green bell pepper, chopped and blackened in skillet
Wheat tortillas (2)
Spread tortillas with refried beans. Sprinkle with cheese and peppers. Place one half in hot skillet. Top other tortilla with beans, cheese and chicken. When first tortilla is crispy, carefully lift out and place on plate, repeat with second half. When second one crispy, place both halves together and flip. Expect leaking and carnage, but it makes it more delicious. Flip a second time, then flip onto plate. Slather with sour cream, pillo de gallo and salsa or guacamole and inhale.
Well, at least that’s the duckie way.

I haven’t met anyone that doesn’t like a quesadilla, but you my dear friend brought them up quite a few notches. Can you believe I was reading this while my eyes were rolling to the back of my head – so delicious!

this is a positively delicious creation. one of the best things about mexican food is how freakin’ sloppy it is–it NEVER looks beautiful in a picture, unless you define beauty by melted cheese, flavorful sauces, and lots o’ meat. and i do.
