Better Bruschetta
The other day, my mom and sister went out with Ben and I to the Olive Garden.
I talked them into trying this with me. My sister and Ben hate tomatoes, but my Mom was game. I was delighted. I like to share.
Until I ordered it. Then I ate half of it. When Ben tried, I slapped his hand.
I’m not kidding.
You see, bruschetta is like Italian pico de gallo. And you all know how much I love pico de gallo.
So of course, I had to make some.
And of course, I added some things.
And even better, it was just as delicious, if not more so.
This is all I’m going to be eating all week.
Unless anyone wants to go to the Olive Garden with me? Say 7? I’ll be the one in the pink dress drinking from the bruschetta plate.
White Bean Bruschetta
Ingredients
- 1 can great northern beans, rinsed and drained
- 3 rome tomatoes, seeded and chopped
- 1/4 cup chopped pitted Greek olives
- 3 tablespoons olive oil, divided
- 1 tblspn basil
- 1 tablespoon minced garlic
- 2 tblspn mixed Italian seasoning
- salt and pepper to taste
- 1 French baguette, cut into slices (if like. I eat it straight from the bowl)
Directions
- In a medium bowl, combine the beans, tomatoes, olives, oil, basil, seasonings, garlic, salt and pepper.
- Place bread slices on an ungreased baking sheet. Brush with olive oil or melted butter, maybe sprinkle a little garlic salt. Broil 3-4 in. from the heat until golden, about 1 minute. Top with bean mixture. Serve immediately.

Bruschetta is a southern Italian classic appetizer! You could serve your bruschetta on a Grillo platter!

I love bruschetta in practically any form–it’s the bread that does it for me. Toasted and drizzled with olive oil, the toppings are really just garnish, lol. My fav “garnish”, though, is an marinated artichoke heart spread. Mmmm–when’s lunch!

I always order Bruschetta where-ever I go. My fave is the brushetta without melted cheese. No. I do not want that. I want the shredded cheese!

I looooooove bruschetta! As an Italian, I am not entirely sure I like the us of Olive Garden to exemplify Italian cuisine

Love the picture of your mom and sis. They look so happy! I’ve never been to the Olive Garden but I absolutely adore brushetta. I’m waiting patiently for my big tomatoes to ripen and then I’ll be all over this!!! The beans bring an earthy touch.
