Broccoli Cheese Rice Casserole
It’s that good.
Broccoli Casserole from Luby’s Cookbook
Serves 8
1/2 cup butter
1/2 cup diced onions
1 pound broccoli florets, frozen
1 can cream of chicken soup
2 cups cooked white rice.
1 tsp garlic
1 tsp. kosher salt
1 tsp black paepper
2 cups Cheddar cheese, shredded
Preheat oven to 350 degrees. Melt butter over medium high heat. Simmer onions and garlic for about three minutes. Add frozen broccoli and cook until almost thawed. Add cream of chicken soup, salt, pepper and simmer, stirring often. Remove from heat and fold in half of cheese. Place mixture into 11 x 7 inch casserole dish (greased) and top with remaining cheese. Bake for 20 minutes then let sit for 20 minutes with a piece of foil on top before serving.
