Christmas Pie for Libby

If anyone has the soul of Christmas, it’s my buddy Libby.

 

Halloween is her favorite holiday, but Libby is the soul and heart of Christmas.

She’s like the Spirit of Christmas Present in a Muppet Christmas Carol– generous, full of laughter and joy and always extending a hand to those less fortunate.  If she had a dollar to her name, she’d give you .99 cents.

 

This weekend, Ben and I got to share in the joy of helping Libby celebrate her graduation from a local university.  She put herself through school while working, and was the first one in her family to graduate with a degree.

And when Libby asked me to make some pies for the celebration, I was honored.  Thrilled.  Delighted.

I love to feed people.  Especially nice people like Libby.

 

Since Libby likes fancy things, instead of a regular crust, I stamped out stars from the dough and sprinkled them all over the pie.

Ben said it looked like a Quasimodo pie.  Apparantly, it was a lot cuter in my head.

At least the pecan pie looked better.

But in the spirit of Libby, the only thing that mattered was dancing the night away and celebrating a truly exceptional woman and friend.  With pie.

My only regret was that I didn’t get a picture of us together at the party.

A small price to pay for having too much fun to remember.

    I think the idea of stars is a great idea and I’ll bet before it went into the oven it looked great. Darn oven can change the shape of dough though. What an awesome friend you are and a huge congratulations to your friend on her graduation.
