Magic Sugar Bars
On a cold blustery day in the Pond,
Too chilly for even the Blond Duck to grill,
The Blond Duck shivered and thought to herself,
“What a perfect day for baking.”
With dreams of magic cookie bars dancing through her heads,
and Christmas carols blaring,
She mixed and poured and patted,
Then froze outside of her cabinet.
“No sweetened condensed milk? No pecans? Oh what do I do!” she wailed,
Burying her head in her hands.
The store was at least two miles away,
And Ben would be home any minute.
Off to the computer she rushed,
Searching for a substitute to save her.
She looked and she searched,
And looked some more,
Until like magic, the answered appeared on her sidebar.
Off she flew to her oven,
Mixing and cackling away,
The hello dollies were shoved in the oven,
Twenty minutes of pure eternity.
Finally the oven dinged,
And the Blond Duck whipped out her new creation.
Before it had time to cool she took a big scoop,
Her poor tongue and lips quite distressed by this implosive action.
But even as her tounge smoldered,
Her burned lips curved into a smile.
For the Blond Duck had not made magic cookie bars,
But something different,
And just as delicious.
Magic Sugar Bars
1 cup almonds
2/3 cup coconut
3/4 cup butterscotch morsels
1 cup grapham cracker crumbs
1/2 stick of butter
1 cup of this condensed milk substitute
Melt butter and mix with grapham cracker crumbs. Pat in greased 8×8 pan. Layer chips, coconut and pour substitute over mixture. Top with almonds. Bake at 350 for 20 minutes. Let cool for at least two hours before cutting.
These aren’t as rich as hello dollies and perfect for those lactose intolerant!

I read about your search for something peanut buttery for your gluten-free friend. One option (I haven’t tried the recipe, but it’s so easy AND it’s Alton Brown, so it might be worth a ‘go’ is peanut butter fudge):

Brilliant. Probably a great idea for people who are allergic to dairy.
