Spinach Cheese Puff Pastry
It’s Tootie’s spinach cheese puff pastry.
It’s spinach, cheese and puff pastry. In a giant pie.
I get giddy around pie. And cheese. And spinach. Especially spinach and cheese in a pie.
Even more giddy than Ben and his remote controlled helicopter.
It’s so good we ate it two nights in a row. And I baked the leftover spinach cheese mixture and ate it on the side.
It’s that good–after all, it’s Tootie’s.
Spinach Cheese Puff Pastry
1/4 cup of butter
1 onion, chopped
3 cloves garlic, minced
24 oz. package of frozen spinach, frozen, chopped
1/2 cup chopped green onions
3/4 cup Parmesean cheese, grated
1 cup Grueyer cheese, grated
4 large eggs, beaten
1 TBSPN bread crumbs
2 tsp kosher salt
3/4 tsp. course black pepper
1/2 tsp. ground nutmeg
2 sheets puff pastry, thawed
1 large egg w/ 1 Tbspn water
Heat oven to 375 degrees. Heat butter in sauce pan and cook onions over med-low heat for five minutes. Add garlic and cook one minute. Squeeze most of the water out of spinach and place in bowl. Add cooked onion mixture, cheese, eggs, cheese, bread crumbs, salt, pepper, nutmeg. Mix well. Flatter one puff pastry sheet on baking tray lined with parchment paper. Spread spinach mixture in middle of pastry, leaving a one inch border. Brush border with egg wash.
Add second puff pastry over spinach and seal edges, pressing together with a fork. Brush top with egg wash–don’t allow wash to drip over edges or pastry won’t rise! Make three small slits in the top pastry, sprinkle with salt and pepper. Bake 30-40 minutes until golden. Cool for 10 minutes, slice and serve.

Hi Blonde Duck .. I love spanakopita – a filo pastry dish with spinach and cheese – I make if often .. so good .. in fact I’m going to make one in the next day or two ..
Love the puff pasty look too .. and I’m happy eating those sort of left overs for a few days .. lunch and supper! Cheers .. rather like the idea of the remote controlled helicopter!! Hilary

I really think you can’t go wrong with baking things in puff pastry. The spinach, parmesan, and gruyere filling sounds great!
