Pumpkin-black bean enchiladas

After writing poetry about pumpkins, carving pumpkins and eating candy corn pumpkins…

 

I had to eat some pumpkin.

 

 

Pumpkin Enchiladas, to be exact.

 

 

Cinnamon and chili powder mixed with nutmeg and cumin…

 

Pumpkin and black beans with a load of cheddar cheese…

All wrapped up in a corn tortilla.

It’s Halloween and Mexican in one delicious meal.
