Pound Cake
Pound cake.
Over Christmas, I made Ben’s grandmother’s pound cake. Nana, heaven bless her soul, was known for her perfect pound cake.
Luckily, I made a pound cake that Ben said would make Nana proud.
And while I can’t share Nana’s pound cake as it’s a family secret, I can share one just like it.
Three things to remember:
- always put the cake in a cold oven
- almond extract and vanilla extract
- Cake flour (If you have all purpose, shift it first. Trust me.)
One bite and it’ll be Christmas all over again.
Stay tuned, Invisible Friends! A new story mañana and a special announcement!

Such great tips on how to make a good pound cake! I didn’t realise that the cake had to go into a cold oven! The things no one tells you – until they do.

Remove 2 tbsp of all purpose flour per cup and replace them with 2 tbsp of corn starch. Voila! Cake flour. I’m so proud of you for carrying on Ben’s Nana’s tradition!
