Turkey Chili Con Carne

Once upon a time, the Blond Duck went to Zumba.

Then she was hungry.

In a whirlwind, she twirled to the kitchen.  With a pound of turkey, can of kidney beans and cherry tomatoes, she whipped up a delicious concoction.

 

But was it chili?  Was it turkey meat?  Was it delicious?

It was delicious.  And whether in crunchy taco shells with cheese and salsa or mixed with rice and guacamole in a burrito bowl, it’s fantastic, fast and easy.

 

Which means more time for dancing.

 

Blond Duck’s Turkey Chili Con Carne

 

1 lb turkey

1/2 cup chopped peppers

1/2 cup onions

1/2 cup chopped cherry tomatoes

5-6 sweet tomatoes, sliced and juices squeezed into skillet

1 can kidney beans

olive oil

Chili powder

Cumin powder

Salsa

Brown onions and garlic with peppers in skillet.  Add turkey and cook until starting to brown.  Squeeze in tomatoes and add cherry tomatoes.  Add seasonings to taste with salt and pepper.  Let simmer for 20-30 minutes.  Stir in 1/4 cup salsa (more if desired.)  Serve and enjoy!

    Thanks for sharing though as a non-meat eater I’d have to find an alternative to the turkey – an occasional fish eater, I suppose I could always try tuna.

    Well why not. I’ve been known to enjoy a bit of post-Zumba turkey chili. In fact, turkey chili is on the menu for next week.

    I can think of a few replacements for chocolate chunks in the pie. Try PB chips or cinnamon chips or toffee bits maybe. Or just leave them out and make it just a coconut pecan pie.
