Spring Cupcakes

My mom and sister are the best bakers.


Bunny cakes…


Cake pops…




They put me to shame.


This year, for Easter, they made me some gluten-free cupcakes.  I’ve been having some tummy trouble and found gluten free breads are a little easier to digest for me right now.  My mom didn’t want me to miss on the bunny cake, so I got my own cupcakes.


I’m not ashamed to say I ate four in one day.  When someone goes to the trouble to make you gluten free cupcakes from scratch, you eat them.  Happily.


My mom and sister used a recipe from a gluten free cookbook, but this is pretty close to it. 


Now, if you’ll excuse me, I’m going to have another cupcake.

    Sorry to hear you’ve been having tummy issues. If wheat/gluten is a trigger for them, I may have some information that would help you pinpoint things better. I’ve recently gone through it myself, after all.
